“Di qua, di là dal Piave ci sta un’osteria” (on this side and the other of the Piave lies a hostelry): the words of a famous song the Alpini troops used to sing in the trenches during the Great War is just one of many references to the quality food and wine that has for centuries brought renown to the area on either side of the river, famous for its role in wartime, that runs through the Province of Treviso. Both the right and left bank of the Piave boast a distinctive landscape and dialect, as well a wealth of characteristic food and wine products. In this area, the sand, gravel and clay of a soil bathed by a wealth of groundwater nourish vines that produce white and red wines with plenty of character. These wines, promoted by the Consorzio Vini del Piave DOC Association since 1959, include distinctive autochthonous varieties such as Raboso, a fl avourful red typical of the Piave area, and the white wines Verduzzo and Tai. International vines that have fl ourished along the banks of the Piave include Carmenère, Merlot and Pinot Grigio, but it is the native Raboso vine, documented as far back as the early 17th century, that is the real standard-bearer of the area. The grapes are grown on the grave – beds of pebbles and gravel of the Piave – using a particular “wheel spoke” training system known as Bellussera, and enthusiasts have gathered together in the Confraternita del Raboso Piave DOC: the efforts made by the local winemakers have led to a rediscovery of the typical food specialities of the area, which provide a perfect complement to the wine, the evolution of which has produced Malanotte DOC, a Raboso with an intense, sophisticated fl avour soon to make its début on the market. There is a huge variety of local recipes for meat – beef, pork, poultry, rabbit and game – as well as many typical encased meat products from Treviso that are perfect for enjoying with the local wines, from the luganega (sausage) to the various kinds of salado (salami). Both the

local soil and the local intellect have gone into creating Manzoni Bianco, a fi rmly structured white wine derived from the most famous of the incroci devised by Professor Luigi Manzoni. The local cheeses include Casatella Trevigiana DOP (Protected Denomination of Origin) – white, glossy, soft, slightly creamy, and a pleasant contrast to the more full-bodied aroma and fl avour of the formajo imbriago obtained by immersing full wheels of cheese in soft wine skins to age them for various lengths of time.

White AsparagusThe Cimadolmo White Asparagus, renowned sfor centuries, was the fi rst to obtain IGP (Protected Geographical PIndication) status from the European Union in 2001 for its outstanding nutritional properties and its inimitable, delicate taste. Cimadolmo devotes an Exhibition-Competitionto the asparagus each year between April and May,and it also lends its name to the Cimadolmo IGP White Asparagus Route, an itinerary twinned with the Piave Wine Route.

The Sinistra Piave area, on the left bank of the river, is not only a land of great red and white wines, such as the autochthonous Raboso; it is also the realm of the asparagus. It is here that you will fi nd the Piave Wine Route, which begins and ends in Oderzo and runs through an attractive fl at, calm landscape characterised by rows of vines, orchards and trees in bloom. Monuments and traces of Roman and mediaeval history, ancient churches and sumptuous Venetian villas are dotted around the area that lies between Conegliano to the north and Roncade to the south, passing through San Polo, Oderzo and Ponte di Piave. The grave, or beds of gravel on the Piave, were the scene of hard-fought battles during the First World War. The river was once travelled down by the zattieri, or raftsmen, who used their craft to transport goods and timber to the Venetian lagoon. In San Polo is the nineteenth-century Villa Papadopoli in English Gothic style, with large gardens and a little lake, while in nearby Ormelle is the church of the Knights Templar, where the famous warrior-priests gave shelter to pilgrims during the Crusades. Cimadolmo, which lies on the river between Maserada and San Polo, is famous for its IGP label white asparagus. In Donegal di Cessalto is Villa Zeno, one of

the three villas built by Andrea Palladio in the Treviso area. Conserved in the ancient Roman city of Oderzo are the remains of the Forum, and a number of interesting fi nds can be admired in the archaeological museum. The town has paved streets and centuries-old frescoed buildings. Situated along the Livenza River were the airfi elds of the Austro-Hungarian troops during the Great War. The low-lying Piave and the stretches of open green countryside are dotted with memorial stones, monuments and ruins that recall the terrible Battle of the Solstice in June 1918. In Monastier, the Benedictine abbey of Santa Maria del Pero today hosts meetings and exhibitions. 6 km further southwest, in Roncade, is the splendid Villa Ciani Bassetti, known as “the Castle”, a sixteenth-century fortifi ed residence surrounded by crenellated walls and towers.

Maserada sul Piave, 12 km north-east of Treviso, in the middle of fl at countryside dotted with vineyards, crop fi elds, rural buildings and villas, is an ideal base from which to explore an area rich in both watercourses and groundwater, fed by the major river, the Piave, which give particular fl avours to the wines produced here. Another product of this area is Casatella, an excellent soft cheese, as well as the characteristic formaj imbriaghi cheeses that are immersed in the fermenting grape must. Maserada lies at the heart of the 70 km cycle tourism route that runs from Oderzo to Treviso in about four and a half hours. On the River Piave, in Fagarè della Battaglia, the remains of over 10 thousand victims are laid to rest in the striking Piave war memorial. Pieces of walls bear famous words such as: “Meglio vivere un giorno da leone che cent’anni da pecora” (Better one day as a lion than a hundred as a sheep) and “Tutti eroi! O il Piave o tutti accoppati! ” (Everyone a hero! Either we reach the Piave or let all of us get killed). the River Monticano meets the River Livenza, in Motta, enveloped in an atmosphere of absolute peace, is the Franciscan basilica of the Madonna dei Miracoli, where the Virgin Mary is said to have appeared in 1510, with three Renaissance cloisters, frescoes in the style of Tiepolo and, in the church itself, a painting of the Assumption by Palma il Giovane and an altar by Sansovino. Meduna di Livenza marks the border between the Veneto and Friuli regions. Going up along the fl ow of the river, above an islet of the Livenza, is Portobuffolè, a delightfully quiet, old-style village surrounded by walls and featuring the characteristic Friuli Bridge, overlooked by the civic tower on which is depicted the lion of San Marco, the symbol of the Republic of Venice. The frescoed house of Gaia Da Camino recalls the poet of the feudal family of the same name cited in Dante’s Purgatory: she went down in the history books as a dissolute woman due to confusion with another Gaia, an illegitimate daughter of one of the Da Camino family who ended up in a brothel in Padua.

Asparagus in white wine sauce

Ingredients: 1 kg of white asparagus, 6 eggs, 12 half eggshells of dry white wine, salt and pepper to taste.

Clean and wash the asparagus. Boil it in salt water, drain and keep warm. Place the egg yolks and wine in a bowl and add salt; cook in a bain-marie, whisking the yolks until creamy. Place the asparagus on a serving dish and serve the white wine sauce separately.
