carrer carmen is a narrow street, right of rambla and
close to the flavors and fragrances of the boqueria
market. When ringing the bell of the modest building at
number 15-17, no need to be announced: the door opens
and a staircase leads to the upper floor. this is where el-
bullicarmen is located, the headquarters of the man ac-
claimed as the greatest chef in the world. Wearing a grey
suit and a black shirt, there is ferran adrià, pacing and
talking excitedly on the phone. on the unpainted brick
wall there is a huge amount of magazine covers and news-
paper articles about him. tableware, samples with the
fantastic caramel confectionery by pastry chef christian
escribà and shelves filled with books on elbulli restaurant
complete the décor.
to the hand extended for a formal greeting adrià re-
acts with two kisses on the cheek. conversation is direct-
ed toward creativity, a theme that is the basis of his work. in
1987, after taking charge of elbulli’s kitchen, adrià assisted
a lecture given by french chef Jacques maximin, who men-
tioned a very simple concept, but something he adopted to
the full: “creativity is being original”.
How does that work, being original for 21 year? to cre-
ate and not to copy others is to be honest. influence and in-
spiration have always been a fact, but it’s imperative to be
honest. the creative process is simple: you have an idea and
you develop this idea. if it works, we have a new dish. this is
a complex issue, as we need time for this development.
at the time of this interview, just before the opening of
the 2008 season (from april to october) of the best res-
taurant in the world (according to restaurant, the rever-
enced english magazine), with three stars in the michelin
guide, adrià confessed not having an idea what he would
serve to the lucky patrons who succeeded in getting a res-

de. terno gris, camisa negra, lá está ferran adrià, andan-
do e falando agitadamente ao telefone. as paredes de ti-
jolo aparente estampam uma infinidade de capas de revis-
tas e jornais com reportagens sobre ele. louças, um mos-
truário com os fantásticos anéis de caramelo do confeitei-
ro christian escribà e estantes com livros do restaurante el-
bulli preenchem o ambiente.
À mão que se estende formal para o cumprimento, adrià
corresponde com dois beijos no rosto. a conversa envere-
da, então, pela criatividade, tema que é a pedra fundamen-
tal de seu trabalho. em 1987, depois de assumir o comando
da cozinha do elbulli, adrià assistiu a uma conferência com
o chef francês Jacques maximin, que disse uma frase à pri-
meira vista tão simples, quase óbvia, mas que ele adotou
como norte: “criatividade é não copiar.”
E como é criar, não copiar, todo o tempo, há 21 anos? criar
e não copiar significa ser honesto. a influência e a inspira-
ção sempre existem, mas é preciso ser honesto. isso é o
mais importante. o processo criativo é simples: você tem
uma idéia e a desenvolve. se funciona, fazemos um prato.
Por outro lado é complexo, porque precisamos de meses
para esse desenvolvimento.
na época desta entrevista, às vésperas da abertura da
estação 2008 do melhor restaurante do mundo (segundo a
respeitadíssima revista inglesa restaurant), com três estre-
las no guia michelin, e que só fun-
ciona entre abril e outubro, adrià
dizia ainda não saber que novida-
des daria de comer aos sortudos
que conseguiram uma reserva pa-
ra este ano. isso porque o proces-
so criativo do elbulli começa com
uma investigação de ingredien-
tes e possibilidades culinárias du-
rante os meses que o restauran-
te está fechado e continua com o
aperfeiçoamento dos pratos mes-
mo depois que ele abre as portas.
“temos uma pessoa da equipe no
Japão. albert, meu irmão, está
pesquisando não sei o que; eu busco outras coisas. no pri-
meiro dia do elbulli começaremos com o menu de 2007. ao
longo do tempo, vamos substituindo alguns pratos antigos
por outros novos, como se mudássemos os quadros da pa-
rede. Por isso, quando alguém pergunta ‘o que haverá no
elbulli em 2008?’, eu digo: ‘não sei’. continuamente vamos
criando. buscamos o caos controlado”, diz adrià.
Mas já tem idéias de ingredientes ou coisas que queira in-
troduzir neste ano? Quatrocentas idéias!
centenas de idéias, mas uma pequena certeza: os comen-
sais de hoje provam menos da chamada “desconstrução”
dos pratos do que os convidados de anos anteriores. essa
que é só uma das muitas invenções de adrià e também es-
tá entre as mais famosas, é definida, segundo ele mesmo,
como a união de uma cozinha de vanguarda com a memó-
ria gustativa. É comer algo, por exemplo, que não se pare-
ce uma tortilla de batatas, mas tem gosto de tortilla de ba-
tatas (essa é uma de suas primeiras desconstruções). “ho-

nary possibilities during the months
when the restaurant is closed, but
continues with the improvement of
the dishes even after the opening of
the place. “Presently one of our team-
mates is in Japan. albert, my broth-
er, is searching for new stuff and so
am i. the first day at elbulli’s we’ll be
serving the 2007 menu. along the
way we’ll substitute some of the dish-
es for new ones, just like if we were
to change the paintings on the wall. that’s why when peo-
ple ask me “what will be new at elbulli’s in 2008?”, i say:
“don’t know. We are always in a creative process. our aim
is a well controlled chaos”.
But do you have ideas of ingredients or dishes to be intro-
duced this year? four hundred ideas!
hundreds of ideas and a small conviction: patrons now-
adays experiment less of what is called “deconstruction”
of dishes than they used to do before. this is just one of
adrià’s many inventions and a very well known one at that:
it’s by his own definition the fusion of avant garde cuisine
with the gustatory memory. it’s to eat something, for ex-
ample, that does not look like a potato pancake, but tastes
like potato pancakes (this is one of his first deconstruc-

no começo dos anos 70, enquanto a nouvelle cuisine
dava novos rumos à gastronomia mundial, ferran adrià
divertia-se jogando futebol pelo clube catalão Juventud de
l’hospitalet. era um menino normal, o que significa dizer
não muito gourmet, aponta o currículo do chef. Pois foi
justamente esse menino que viria décadas depois romper a
hegemonia francesa na culinária. sua revolução, segundo
o crítico Josimar melo, foi ainda mais radical do que a
da nouvelle cuisine. enquanto a dos franceses pregava a
rejeição ao excesso de complicação na preparação de pratos
e combinações mais criativas de ingredientes, a de adrià
trouxe inovações como a desconstrução e técnicas como a
esferificação. o encontro de adrià com a culinária aconteceu
em 1980, quando ele decidiu largar os estudos e trabalhar
para poder passar férias em ibiza. tornou-se lavador de
pratos e depois iniciou-se na cozinha clássica. mas foi durante
o tempo em que prestou serviço militar que teve a primeira
experiência como responsável por uma cozinha. seu encontro
com o elbulli se deu em 1983, quando conseguiu um estágio
no restaurante e conheceu Juli soler, na época chefe de salão
e atualmente seu sócio. hoje, a assinatura de adrià extrapola
o elbulli: está em produtos e kits de cozinha vendidos para
cozinheiros amadores, em linhas de azeite da marca borges,
cafés da lavazza e até em uma rede de fast-food mantida pela
rede espanhola de hotéis nh. mas não é qualquer fast-food,
chama-se fast good, com muita propriedade.

one can find crazy little things like effervescent lollipops.
and super displays of originality like cold consommé of tu-
cupi with passion fruit morsels. not to mention his famous
mousses. it’s inevitable that he should be compared with
other great artists, such as Picasso. adrià, who was born 45
years ago at l’hospitalet of llobregat, a town in the prov-
ince of barcelona, says that “ it’s fantastic to have recogni-
tion like this, but i’m a cook, not a painter”.
Do you think of yourself as an artist? What is an artist
anyhow? to me cooking is an expression of myself. some
people think i’m an artist, other
don’t. i am… a cook.
Your cooking style has phases
like Picasso had in his paint-
ing? oh yes, i have my books,
with thousands of pages of our
phases at elbulli’s year after
year.
In what kind of phase are you
now? in the phase of taking
pleasure in cooking. as i’ve said
a million times, we must dream
and simply enjoy the pleasure
of cooking.

sas espumas. inevitável que seja comparado a outros gran-
des artistas, como Picasso. adrià, nascido há 45 anos em
l’hospitalet de llobregat, uma cidade da província de bar-
celona, diz que é fantástico ser visto dessa forma, mas...
“sou um cozinheiro, não sou pintor”, diz.
E se considera um artista? bom,
que é ser uma artista? Para mim
a cozinha é uma linguagem que
serve para eu me expressar. al-
guns acham que sou artista, ou-
tros não. eu... sou cozinheiro.
A sua cozinha tem fases, co-

na pintura? sim, tenho meus li-
vros, com milhares de páginas

E em que fase você está agora?
na fase de desfrutar do prazer co-
zinhando. como já disse mil vezes,
nós devemos sonhar e aproveitar o
prazer de cozinhar, simplesmente.

at the beginning of the 70’s, while the nouvelle cuisine was
leading world gastronomy in a new direction, ferran adrià
was having fun, playing soccer for the catalan club named
Juventud de l’hospitalet. he was “a normal boy, meaning
he was no gourmet”, states the chef’s resumée. a few
decades later this young man would break the hegemony of
french cuisine. his revolution, according to critic Josimar
melo, was even more radical than that of the nouvelle
cuisine. While the french revolution ruled out the excesses
in the preparation of dishes and sought more creative use
of ingredients, adrià’s brought innovations such as the
concept of deconstruction and of spherical techniques into
the craft of cooking. adrià’s first encounter with cooking
happened in 1980, when he decided to drop out of school
and get a job so that he could spend time in ibiza. he started
washing dishes in a restaurant and later went to learn
classical cuisine. his first experience of being responsible
for a kitchen came when he was doing military service.
his encounter with elbulli happened in 1983, when he got
an internship at the restaurant and met Juli soler, who
worked as a chief supervisor in those days – now they’re
partners. adrià’s signature is on products and kitchen
utensils marketed for amateur cooks, in olive oils for the
borges brand, lavazza coffee and even a fast food network
belonging to the nh spanish hotel network. but it’s not any
fast food, it’s named most appropriately – fast good.

adrià, o cozinheiro que não é pintor, foi o primeiro de seu
métier a ser convidado para participar do mais importan-
te evento de arte contemporânea do mundo, a documenta
de kassel. no ano passado, o elbulli, a 1 500 quilômetros
da alemanha, se converteu em um dos pavilhões da expo-
sição. a cada noite, dois convidados da documenta pro-
vavam as obras, ops, os pratos servidos em forma de me-
nu degustação. no restaurante, onde um jantar custa cer-
ca de 200 euros por pessoa (mais de r$ 500), não se es-
colhe o que se quer comer: os garçons apenas perguntam
antes de servir se o cliente tem alguma restrição alimen-
tar, anunciam os nomes dos pratos quando eles chegam à
mesa e orientam como devem ser comidos.
Cozinha é arte ou não? Que tal a experiência na Docu-
menta? foi muito importante, porque demandou uma
longa reflexão sobre a criatividade. mas quando me con-
vidaram, eu disse que cozinha não é museu. [Por isso a
documenta foi ao elbulli e não vice-versa]. Para mim, não
é tão importante definir se a cozinha é arte ou não. ela é
uma disciplina que pode estar ao lado do design, da pin-
tura, da música. Pode se interligar com todas elas, por-
que é uma linguagem. richard hamilton [um dos papas da
pop art] e vicente todoli, diretor da tate modern, estão
fazendo um livro sobre a participação de elbulli na do-
cumenta. então, saberemos qual a impressão que outras
pessoas tiveram sobre isso.
adrià se diz enamorado do brasil. Já veio conferir nosso
carnaval, em 1988. morre de vontade de visitar a amazônia.
mas tem medo. “sei que vou me apaixonar pelos produtos e
depois não vou poder tê-los aqui. Precisaria haver uma co-
nexão melhor para a importação de produtos frescos.”
Você vai ao Brasil neste ano? sempre me convidam. este ano
tenho de ir [o chef deve vir em novembro para o evento mesa
tendências]. adoro o brasil, seus jogadores de futebol e seus
gourmets. os melhores gourmets do mundo estão no brasil.
ed to participate in the most important contemporary art
event in the world, documenta, in kassel. last year, elbul-
li, at a 1000 miles distance from germany became one of
the pavilions of the exhibition. each evening, two guests
from documenta were invited to savor the special sample
menu. at the restaurant, where dinner costs around 200
euros per person (in excess of r$ 500) patrons do not or-
der their food: waiters simply ask if the client has some
special restriction, then announce the name of the dish-
es as these are served and give orientation on how they
should be eaten.
Is cooking an art or not? How was your experience at Doc-
umenta? it was very important, as it demanded a long re-
flection on creativity. however, when i received the invita-
tion i told them that a kitchen is not a museum. (this is why
documenta went to elbulli and not vice-versa). for me it’s
not really important to define cooking as art or not. it’s a
language that can be interconnected to design, painting or
music. richard hamilton (the father of pop art) and vicen-
te todoli, director of tate modern, are working on a book
about elbulli’s participation at documenta. then we’ll know
what kind of impression other people had on this.
adrià is totally besotted with brazil. he came to enjoy our
carnival in 1988. he’d love to visit the amazon, but is afraid
to. “i know i will fall in love with their produce and then i
won’t be able to have them here. it would be necessary to
have a better connection to import fresh products”.
Are you going to Brazil this year? i’m always invited, this year
i must go. (the chef is supposed to come in november for the
mesa tendências event). i love brazil, its soccer players and
gourmets. the best gourmets in the world are in brazil.

documenta. eu nunca desejei nada disso. e isso é interessante
de se analisar: como consigo algo sem buscá-lo? sei que muita
gente gostaria de ser o número 1, e quando consegue chegar
um pouquinho abaixo, ao número 2, já não fica feliz.
E você? É feliz? sim, eu consegui mil vezes mais do que
poderia sonhar.
Há algo que deseja para o futuro? continuar como estou.
mas uma coisa é fato: o fenômeno ferran adrià está duran-
do muito tempo. não é normal. Jack nicholson não ficou
anos ganhando o oscar. e para nós o que acontece é que há
anos estamos ganhando o oscar.
Você gostaria de assistir a uma nova revolução na gastro-
nomia? me encantaria. mas isso não é fácil de ocorrer. hou-
ve a revolução da nouvelle cuisine, depois a minha. outra
agora e em tão pouco tempo é muito improvável. Porém,
se não acontecer, estaremos aí demasiado tempo. eu não
quero mais estar na crista. estou contente, mas aconteça o
que acontecer, já estou aí. adoraria ver algo novo surgir. eu
me alimento disso. e posso ser generoso. só não é genero-
so quem ainda não chegou lá.

2, they’re not happy.
What about you? Are you happy? Yes, i got a thousand
times more than i have ever dreamed of.
What do you wish for the future? to go on as i am now.
one thing is a fact: the ferran adrià phenomenon has
been lasting for a long time. it’s not normal, Jack nichol-
son did not get an oscar, year after year. but for us this is
exactly what is happening – we have been winning an os-
car for many years.
Would you like to see a new revolution in the field of
gastronomy? i would be delighted. but this is not easy to
happen. there was the nouvelle cuisine revolution, then
there was mine. another one in such short time, is un-
likely. but if there’s no new revolution, then we’ll be at
the top far too long and i’ve had enough. i’m happy, but
i’m already there, i have arrived. i’d love to see some-
thing new come up. this is what i feed on. i can afford to
be generous. only those who have not yet arrived to the
top can’t be generous.
Por que? não sei por quê. É como acontece com os jogado-
res de futebol, não sabemos porque há tantos e tão bons no
brasil. o paladar do brasileiro é diferente, talvez. não sei.
Quais seus ingredientes brasileiros favoritos? as frutas. o
palmito me encanta. e o tucupi [caldo extraído da mandio-
ca, usado na culinária do norte do brasil].
Pensa em fazer consultoria em restaurantes no Brasil?
não. acho que devemos deixar a gastronomia do brasil com
os brasileiros, que são muito criativos. há gente como o
alex atala e outros chefs jovens que estão criando a cozi-
nha brasileira contemporânea.
“ele é um cara supergeneroso. abriu um grande espaço pa-
ra a culinária latino-americana”, diz alex atala, proprietário
e chef do d.o.m., que tem grande admiração pela personali-
dade e pelo trabalho de adrià. segundo ele, a revolução do
chef catalão levou as pessoas a comer com os cinco senti-
dos. e também a usar o intelecto, a refletir melhor sobre os
atos de cozinhar e de se alimentar.
Como é chegar aonde você chegou, lidar com o assédio, com
a fama? o melhor é não ligar para isso. muitos gostariam de
estar na capa do new York times, de ser convidados para ir à
Why is that? i don’t know. it’s just like with soccer players,
we don’t know why so many good ones are from brazil. Per-
haps brazilian taste buds are different.
What are you favorite Brazilian ingredients? the fruit. heart
of palm is wonderful. and tucupi (gravy extracted from cas-
sava, much used for cooking in the north of brazil).
Do you consider working as a consultant for Brazilian res-
taurants? no. i think one should let brazilians do their own
gastronomy as they’re very creative. there are people like
alex atala and other young chefs who are developing a con-
temporary brazilian cuisine.
“he’s a most generous person. and he opened an impor-
tant space for latin-american cuisine”, says alex atala,
chef of restaurant dom, expressing great admiration both
for adrià’s personality and his work. according to atala,
the catalan chef’s revolution made people start to eat with
their five senses. and also to use their minds, to reflect
better about the act of eating and of cooking.
How do you feel about your fame and people always being
around you? best is not to make much of this. many peo-
ple would like to be on the cover of the new York times,
or be invited to the documenta. i’ve never wanted any of
it. it’s interesting to analyze this: how can you get some-
thing you never wanted? i know of many people who would
